A really great thing about being thirty is knowing how important it is to eat healthy. Having said that, I pretty much live on pizza and will continue to do so for as long as I have teeth. Matty & I love making our own pizza at home, and we used to buy the pre-made dough at Trader Joe's or Whole Foods and the pre-shredded cheese. But, because I'm thirty and know what I like, (and I tell everyone what that is) I now have a simple dough recipe from Pioneer Woman's cookbook (Best. Gift. Ever! Thank you Debbie!) that is so ridiculously quick and delicious that I can't possibly not use it. Also, I've learned that pre-shreded cheese has some seriously weird stuff in it to keep the cheese from mooshing back into a solid, so grate your own cheese. Grate. Your Own. Cheese. It's good for building arm strength and for workin' up an appetite, and you can usually but a block of cheese cheaper than shredded. See, I'm just trying to help you out. I'll post up some photos and such of the pizzas we are gonna make this weekend (I've already had two this week, but who cares - they're soooo frickin' good and much healthier than delivery). Seriously, try PW's dough, and be sure to use good flour (I like Bob's Red Mill Organic Unbleached White Flour) as it makes all the difference, it's kinda the main ingredient ya know. Also, don't hesitate to substitute a little somthin' healthy for a bit of the flour. I substituted 1/4 cup (of 4 cups total) with Bob's Red Mill Flaxseed Meal and it was awesome! I couldn't taste any difference and the texture was perfect for a thin-crust. The only problem was that Matty didn't want me to mess with the original recipe and since he could actually see the flaxseed meal I couldn't really lie about it (I never lie), but if you were to use whole wheat flour and mix in some flaxseed meal or other healthy stuff no one would be the wiser. Sneaky....
